Yap\u0131m\u0131ndan i\u00e7imine b\u00fcy\u00fck bir incelik gerektiren T\u00fcrk kahvesinin \u201840 y\u0131ll\u0131k hatr\u0131\u2019, 500 y\u0131ll\u0131k ge\u00e7mi\u015fi ve dakikalar s\u00fcren yap\u0131m\u0131 onu yaln\u0131zca bir i\u00e7ecek olmaktan \u00e7\u0131kar\u0131p hayat\u0131m\u0131z\u0131n bir par\u00e7as\u0131 h\u00e2line getirdi. T\u00fcrk kahvesi ayn\u0131 zamanda bir rit\u00fcel, gelenek ve b\u00fcy\u00fck bir k\u00fclt\u00fcrel miras. Yeme i\u00e7me uzman\u0131 ve sekt\u00f6r\u00fcn \u00f6nde gelen isimlerinden Osman Serim, bu miras\u0131n d\u00fcn\u00fcn\u00fc ve bug\u00fcn\u00fcn\u00fc \u0130letim Gazetesi\u2019ne anlatt\u0131. Serim, bir di\u011fer rivayetin de 1543&#8217;te \u00d6zdemir Pa\u015fa\u2019n\u0131n Yemen&#8217;nin Osmanl\u0131 topra\u011f\u0131na kat\u0131lmas\u0131 ve bunun sonucunda kahveyi \u0130stanbul\u2019a getirmesi oldu\u011funu s\u00f6yleyerek getirilen kahveyi tadan ilk padi\u015fah\u0131n Kanuni Sultan S\u00fcleyman oldu\u011funun iddia edildi\u011fini anlatt\u0131.&nbsp;<\/p>\n\n\n\n<p>Kahvenin Osmanl\u0131\u2019da yap\u0131l\u0131\u015f\u0131, haz\u0131rlan\u0131\u015f\u0131 ve ikram edili\u015finin de\u011fi\u015fiklikler g\u00f6sterdi\u011fini s\u00f6yleyen Serim, kahvenin T\u00fcrk kahvesi h\u00e2line gelmesinin Osmanl\u0131\u2019n\u0131n kahvenin y\u00f6nteminde ve sunumunda de\u011fi\u015fiklikler yapmas\u0131ndan geldi\u011fini ve b\u00f6ylece T\u00fcrk kahvesinin ortaya \u00e7\u0131kt\u0131\u011f\u0131n\u0131 ifade etti.&nbsp;<\/p>\n\n\n\n<p><strong>Osmanl\u0131\u2019n\u0131n giderek pop\u00fclerle\u015fen i\u00e7ece\u011fi<\/strong><\/p>\n\n\n\n<p>Serim, kahvenin \u0130stanbul&#8217;a gelmesinin akabinde 16. y\u00fczy\u0131l\u0131n ortalar\u0131nda Hi\u015fem ve \u015eems isimli iki Suriyeli Osmanl\u0131 vatanda\u015f\u0131n\u0131n Beta Yeni Han\u2019da oldu\u011fu rivayet edilen bir kahvehane a\u00e7mas\u0131yla halk aras\u0131nda da yay\u0131ld\u0131\u011f\u0131n\u0131 belirtti. Serim, kahvenin kavruldu\u011fu en eski f\u0131r\u0131n\u0131n da Beta Yeni Han\u2019da bulundu\u011funu s\u00f6yledi.&nbsp;<\/p>\n\n\n\n<p>Kahvenin kahvehanelerle birlikte m\u00fcthi\u015f bir h\u0131zla yay\u0131ld\u0131\u011f\u0131n\u0131 ifade eden Serim,&nbsp;Evliya \u00c7elebi\u2019nin bir eserinde \u0130stanbul&#8217;da 16. y\u00fczy\u0131lda yakla\u015f\u0131k 200 kahvehane oldu\u011fundan bahsetti\u011fini aktard\u0131. Bu say\u0131n\u0131n olduk\u00e7a y\u00fcksek oldu\u011funun alt\u0131n\u0131 \u00e7izen Serim, o d\u00f6nemde&nbsp; belirli meslek\u00ee gruplara \u00f6zel olarak da kahvehanelerin a\u00e7\u0131ld\u0131\u011f\u0131n\u0131 s\u00f6yledi.<\/p>\n\n\n\n<p><strong>Kahve\u2019nin yay\u0131lma hikayesi<\/strong><\/p>\n\n\n\n<p>Kahvenin Osmanl\u0131\u2019dan sonra Avrupa\u2019ya yay\u0131ld\u0131\u011f\u0131n\u0131, s\u0131cak iklimlere sahip Karayipler, G\u00fcney Amerika, Malezya ve Endonezya gibi b\u00f6lgelerde de kahvenin yeti\u015ftirildi\u011fini, dolay\u0131s\u0131yla art\u0131k ticari bir \u00fcr\u00fcn olarak g\u00f6r\u00fclmeye ba\u015fland\u0131\u011f\u0131n\u0131 aktard\u0131. Serim, ek olarak &#8220;Kahve art\u0131k bir d\u00fcnya i\u00e7ece\u011fi h\u00e2line geliyor ve d\u00fcnyada yayg\u0131nla\u015f\u0131yor. \u00d6ncelikle d\u00fcnya \u00e7ap\u0131nda Osmanl\u0131&#8217;dan yay\u0131ld\u0131\u011f\u0131 i\u00e7in bir Osmanl\u0131 i\u00e7ece\u011fi olarak tan\u0131n\u0131yor. 17. y\u00fczy\u0131l\u0131n yar\u0131s\u0131na kadar Osmanl\u0131 kahvesi olarak d\u00fcnyaya yerle\u015fiyor&#8221; dedi. 17. y\u00fczy\u0131ldan sonra da \u00e7e\u015fitli kahve demleme y\u00f6ntemleri ve filtre kahvenin ortaya \u00e7\u0131kt\u0131\u011f\u0131n\u0131, 19. y\u00fczy\u0131lda moka potta yap\u0131lan kahveler, 20. y\u00fczy\u0131lda ise espresso, liyofilize kahveler gibi \u00e7e\u015fitli kahve ve y\u00f6ntemlerinin ortaya \u00e7\u0131kt\u0131\u011f\u0131n\u0131 anlatt\u0131. T\u00fcrkler bu konuda Arap kahvesi m\u0131rraya g\u00f6re farkl\u0131 bir y\u00f6ntem geli\u015ftirmi\u015fler. Dolay\u0131s\u0131yla buna T\u00fcrk kahvesi denmi\u015f d\u00fcnyada. T\u00fcrk kahvesi dedi\u011fimiz y\u00f6ntem bu d\u00f6rt \u015feyden olu\u015fmu\u015ftur.<\/p>\n\n\n\n<p>Serim, T\u00fcrk kahvesinin ilk a\u015famas\u0131 olarak belirtilen kavurma a\u015famas\u0131n\u0131n di\u011fer kahvelere g\u00f6re daha farkl\u0131 oldu\u011funu &#8220;D\u00fcnyan\u0131n b\u00fct\u00fcn kahveleri mutlaka kavrulur. T\u00fcrk kahvesi de kavrulur. Fakat French roast, \u0130talian roast dedi\u011fimiz kavurmalar \u00e7ok daha koyu renktir. \u00d6\u011f\u00fct\u00fclmemi\u015f espresso ya da filtre kahveyi avcuna koydu\u011fun zaman neredeyse siyah oldu\u011funu g\u00f6r\u00fcrs\u00fcn. T\u00fcrk kahvesi ise dedi\u011fimiz daha a\u00e7\u0131k bir renktir. Dolay\u0131s\u0131yla T\u00fcrkler kahveyi \u00e7ok kavurmuyorlar. Kahverengi olarak b\u0131rak\u0131yorlar&#8221; s\u00f6zleriyle a\u00e7\u0131klad\u0131.<\/p>\n\n\n\n<p>Serim, ikinci a\u015fama olan \u00f6\u011f\u00fctme hakk\u0131nda T\u00fcrk kahvesinin d\u00fcnyada en ince \u00f6\u011f\u00fct\u00fclen kahve oldu\u011funu vurgulayarak Bat\u0131 kahvelerinin en incesi olan espressodan bile daha ince oldu\u011funu s\u00f6yledi ve &#8220;D\u00fcnyada buna \u2018powder coffee\u2019 derler. Yani toz kahve, pudra kahve derler. O kadar incedir. Hatta T\u00fcrk kahvesini al\u0131p iki parma\u011f\u0131n\u0131n aras\u0131nda ovu\u015fturdu\u011fun zaman hi\u00e7 p\u00fcrt\u00fck gelmemesi laz\u0131m. Pudra gibi olmas\u0131 laz\u0131m&#8221; diye a\u00e7\u0131klad\u0131. Serim, \u00fc\u00e7\u00fcnc\u00fc ad\u0131m olan yap\u0131l\u0131\u015f a\u015famas\u0131 i\u00e7in \u015fu s\u00f6zleri kulland\u0131:&nbsp;<\/p>\n\n\n\n<p>T\u00fcrk kahvesi ilk olarak ibriklerde yap\u0131lm\u0131\u015ft\u0131r ama 19. y\u00fczy\u0131ldan itibaren bak\u0131r cezvelerde de yap\u0131l\u0131r. Bir ki\u015filik, en fazla iki ki\u015filik olmak \u00fczere. Cezve, daha fazla ki\u015fiye yapmaz \u00e7\u00fcnk\u00fc telvesini e\u015fit olarak payla\u015famazs\u0131n.<\/p>\n\n\n\n<p><strong>Son ad\u0131m: T\u00fcrk kahvesi sunumu<\/strong><\/p>\n\n\n\n<p>Geleneksel olarak T\u00fcrk kahvesine \u015feker konulmad\u0131\u011f\u0131n\u0131, bunun sonradan ortaya \u00e7\u0131kt\u0131\u011f\u0131n\u0131 belirten Serim, kahvenin tek ki\u015filik fincanlarda yan\u0131nda tatl\u0131 bir yiyecekle sunuldu\u011funu belirtti.\u00d6zellikle Osmanl\u0131&#8217;da Ramazan aylar\u0131nda ise hurmayla servis edildi\u011fini s\u00f6yleyen Serim, ayr\u0131ca Osmanl\u0131\u2019da \u015ferbetle de i\u00e7ildi\u011fini &#8220;Kahvenin ac\u0131l\u0131\u011f\u0131n\u0131n \u00f6n\u00fcne ge\u00e7mek i\u00e7in ilk \u00f6nce \u015ferbetle a\u011f\u0131z tatland\u0131r\u0131l\u0131yor ve \u00fczerine T\u00fcrk kahvesi i\u00e7iliyor&#8221; s\u00f6zleriyle a\u00e7\u0131klad\u0131. Telve son yuduma kadar o lezzet, aroma ve rengin kayna\u011f\u0131n\u0131 kahveye aktarmaya devam ediyor. \u00c7ok aromatik ve \u00e7ok lezzetli bir kahve ise di\u011fer kahve \u00e7e\u015fitlerindeki gibi bu i\u00e7ti\u011fin s\u0131v\u0131dan ayr\u0131lm\u0131yor. Son saniyeye kadar, son yuduma kadar telve bu \u00f6zellikleri kahveye aktarmaya devam ediyor.<\/p>\n\n\n\n<p><strong>D\u00fcnyada kahve t\u00fcketimi ve T\u00fcrk kahvesinin konumu<\/strong><\/p>\n\n\n\n<p>Serim, d\u00fcnyada sudan sonra en \u00e7ok t\u00fcketilen i\u00e7ece\u011fin kahve oldu\u011funu belirtti. D\u00fcnyada \u015fu an g\u00fcnde yakla\u015f\u0131k 3 milyar doz kahve i\u00e7ildi\u011fini s\u00f6yleyen Serim bu say\u0131n\u0131n net olarak 3 milyar ki\u015fiyi g\u00f6stermedi\u011fini, baz\u0131 ki\u015filerin g\u00fcnde birka\u00e7 tane kahve i\u00e7ti\u011fini dolay\u0131s\u0131yla yakla\u015f\u0131k say\u0131n\u0131n a\u015fa\u011f\u0131 yukar\u0131 1,5 milyar ki\u015fi olabilece\u011fini ifade etti. T\u00fcrk kahvesinin d\u00fcnyadaki i\u00e7im miktar\u0131n\u0131 ise &#8220;D\u00fcnyada yap\u0131lan her be\u015f kahveden bir tanesi \u0130talyan espresso y\u00f6ntemiyle yap\u0131l\u0131r. Her yap\u0131lan 200 kahveden bir tanesi ise T\u00fcrk kahvesi y\u00f6ntemiyle yap\u0131l\u0131r. Dolay\u0131s\u0131yla 40 \u0130talyan espresso y\u00f6ntemi ile yap\u0131lan kahveye kar\u015f\u0131 bir tane T\u00fcrk kahvesi, cezve kahvesi yap\u0131l\u0131yor. Yani \u0130talyanlara g\u00f6re 40&#8217;ta bir seviyesinde. Bu \u00e7ok g\u00f6z\u00fckmeyebilir ama g\u00fcnde 3 milyar doz kahve i\u00e7ildi\u011fi d\u00fc\u015f\u00fcn\u00fcl\u00fcrse hi\u00e7 de az de\u011fil, hatta olduk\u00e7a fazla. D\u00fcnya \u00e7ap\u0131nda 25-30 milyon doz T\u00fcrk kahvesi i\u00e7iliyor g\u00fcnde. Kahve makineleri de bu durumu biraz daha kolayla\u015ft\u0131r\u0131yor&#8221; s\u00f6zleriyle aktard\u0131.&nbsp;<\/p>\n\n\n\n<p>Serim, geleneksel olarak \u00e7ay t\u00fcketiminin en fazla oldu\u011fu \u00c7in, Hindistan, Japonya gibi \u00fclkelerde de son y\u0131llarda kahve t\u00fcketiminin artt\u0131\u011f\u0131n\u0131 belirtti ve art\u0131k astronotlar\u0131n bile uzaya yanlar\u0131na espresso makineleri alarak \u00e7\u0131kt\u0131\u011f\u0131n\u0131 vurgulayarak kahvenin \u00e7ay\u0131n yerini ald\u0131\u011f\u0131n\u0131 ve t\u00fcketim s\u0131ras\u0131nda 2. s\u0131raya oturdu\u011funu vurgulad\u0131.<\/p>\n\n\n\n<p><strong>Modern d\u00fcnyan\u0131n modernle\u015fen cezveleri<\/strong><\/p>\n\n\n\n<p>Modern T\u00fcrk kahvesi makineleri konusunda olumlu bir tav\u0131r benimseyen Serim; cezveler konusunda gelenekselci olmad\u0131\u011f\u0131n\u0131, ikisini de \u00f6nemli g\u00f6rd\u00fc\u011f\u00fcn\u00fc vurgulad\u0131. Asil \u00e7ekirdeklerle do\u011fru kavrulmu\u015f, do\u011fru \u00f6\u011f\u00fct\u00fclm\u00fc\u015f bir kahveyi makine ile de yap\u0131lsa \u00e7ok lezzetli olacakt\u0131r. Urfa&#8217;dan, Giresun&#8217;dan, K\u0131rklareli&#8217;nden&#8230; Bu \u015fekilde 40&#8217;tan fazla t\u00fcrk\u00fc var&#8221; s\u00f6zleriyle a\u00e7\u0131klad\u0131. Kahve fal\u0131n\u0131n saraydan gelen bir gelenek oldu\u011funu s\u00f6yleyen Serim kahve fal\u0131 i\u00e7in &#8220;\u0130lk olarak haremlerde ortaya \u00e7\u0131km\u0131\u015f bir gelenek oldu\u011fu d\u00fc\u015f\u00fcn\u00fcl\u00fcyor. H\u00e2l\u00e2 yayg\u0131n bir gelenek. D\u00fcnyada fal\u0131na bak\u0131lan \u00e7ok az yiyecek ve i\u00e7ecek var. Serim, \u201cEge b\u00f6lgesinde i\u00e7ine sak\u0131z konur kahvenin, \u0130stanbul&#8217;da \u00e7ifte k\u00f6p\u00fckl\u00fc \u2018payitaht kahvesi\u2019 dedikleri \u2018ba\u015f\u015fehir kahvesi\u2019 var, Gaziantep taraflar\u0131nda da i\u00e7ine baz\u0131 baharatlar kat\u0131larak i\u00e7ilir\u2019\u2019dedi.<\/p>\n\n\n\n<p><strong>T\u00fcrk Kahvesi K\u00fclt\u00fcr\u00fc ve Ara\u015ft\u0131rmalar\u0131 Derne\u011fi\u2019nin kurulu\u015fu: UNESCO\u2019ya uzanan yolculuk<\/strong><\/p>\n\n\n\n<p>Haz\u0131rlanmas\u0131nda ve pi\u015firilmesindeki g\u00fc\u00e7l\u00fckler sebebiyle T\u00fcrk kahvesinin 2000&#8217;li y\u0131llar\u0131n ba\u015flar\u0131nda tehdit alt\u0131nda oldu\u011funu ve bir\u00e7ok i\u015fletmenin art\u0131k T\u00fcrk kahvesi yapmaktan vazge\u00e7ti\u011fini anlatan Serim, o y\u0131llarda kafe ve restoranlar\u0131n \u00e7o\u011funlukla yabanc\u0131 kahveler yapt\u0131klar\u0131n\u0131 s\u00f6yledi.T\u00fcrk Kahvesi K\u00fclt\u00fcr\u00fc ve Ara\u015ft\u0131rmalar\u0131 Derne\u011fi\u2019nin bu \u015fekilde kurulmaya karar verildi\u011fini ve T\u00fcrk kahvesinin UNESCO Somut Olmayan K\u00fclt\u00fcrel Miras Listesi\u2019ne nas\u0131l girdi\u011fini Serim, &#8220;T\u00fcketiminin azald\u0131\u011f\u0131n\u0131 g\u00f6r\u00fcp biz bir grup insan topland\u0131k ve T\u00fcrk kahvesini canland\u0131racak bir dernek kurmaya karar verdik. Orada da \u2018UNESCO&#8217;nun bir k\u00fclt\u00fcr lisesi var. Bu k\u00fclt\u00fcr lisesine m\u00fcracaat edelim\u2019 fikri at\u0131ld\u0131 ortaya. K\u00fclt\u00fcr Turizm Bakanl\u0131\u011f\u0131 da bize bu konuda destek verdi. Dernek olarak K\u00fclt\u00fcr Turizm Bakanl\u0131\u011f\u0131\u2019yla ve akademisyenlerle birlikte bir sene kadar u\u011fra\u015ft\u0131k. Ciddi bir \u00e7al\u0131\u015fma yap\u0131ld\u0131 ve bir dosya haz\u0131rland\u0131. Sonras\u0131nda da UNESCO&#8217;ya m\u00fcracaat edildi. UNESCO&#8217;dan ise \u015fimdiye kadar hi\u00e7bir k\u00fclt\u00fcr i\u00e7ece\u011finin bu listeye girmeye hak verilmedi\u011fi y\u00f6n\u00fcnde bir geri d\u00f6n\u00fc\u015f ald\u0131k. O tarihte gastronomik anlamda bir tek Frans\u0131z mutfa\u011f\u0131na verilmi\u015fti. Dolay\u0131s\u0131yla alamazs\u0131n\u0131z ve bu listeye giremezsiniz dediler ama T\u00fcrk kahvesi girdi&#8221; s\u00f6zleriyle vurgulad\u0131.
